Bulgur Pilaf

Bulgur pilaf is one of my favorite dish..Bulgur is most often found in Middle Eastern, Indian and Mediterranean dishes. It has a light and nutty flavor. My favorite is the pilaf just plain pilaf and topped with delicious sauteed vegetable and tomato sauce.
1 cup coarse bulgur
1 small onion, diced
1 tbsp tomato or pepper paste
2 tomatoes, diced
1 cup green pepper, coarsely chopped
3 cloves garlic, sliced
2 cups mushrooms, sliced
1 tsp pepper flakes
1 tsp black pepper
3 tbsp olive oil
1 1/2 cups water
salt, nutmeg,black pepper
2 tbsp olive oil
-Heat the oil in a pot and add the onion. When the onion is cooked add the paste, stir for a minute. Add the water, bulgur, pepper flakes, ground black pepper and salt.
-Wait until the water boils. Then turn the heat down all the way to very low and cook until the water is absorbed and bulgur is tender.
Once it’s cooked, cover the pot by putting a paper towel between the pot and the lid to absorb the moisture. Let it sit for at least 5-10 minutes.
Heat the olive oil in the medium size pan and add the garlic . Saute it for 2 minutes.Add the pepper, mushrooms and chopped tomato and saute for another 10 minutes.Before you turnĀ off the stove add the dry spices in the pan and cook for 2 more minutes. Put the sauce on top of the bulgur and serve with Kofte(Turkish meatballs)
